This website applies the core concept of Ayurveda "YOU ARE WHAT YOU CAN DIGEST" instead of the concept "you are what you eat" that we commonly know, because, in the end, no matter what you eat, if your body cannot digest it correctly, it can trigger a slow and silent process of accumulation of waste and toxins that in the long run can affect your health and decrease your vitality. It combines the Ayurveda methodology with the gastronomic richness of Mexico and its sophisticated use of the five tastes: sweet, salty, spicy, astringent, and bitter.

I use the Ayurveda methodology to modify favorite recipes and menus from different parts of Mexico to make them healthier and more balanced while preserving their authentic and exquisite flavors. By "healthy" I mean foods, food combinations, and preparation techniques that are easier to digest and have higher amounts of micronutrients and high-quality macronutrients.

RECOMMENDATIONS TO STRENGTHEN YOUR METABOLISM

1. EAT FRESH FOODS

Whole, vital, unprocessed. This is not a trend. These are the foods the human body has known for thousands of years. Fresh foods, unlike processed, packaged, and refined foods, do not confuse the body or weaken your metabolism.

2. DRASTICALLY REDUCE CONSUMTION OF ULTRA PROCESSED FOODS

Ultraprocessed foods tend to be refined and thus stripped of their nutrients. They are high in sugar, salt, artificial flavors preservatives in order to make them more palatable and to increase their shelf life. They are an important driver of today´s major health problems such as obesity, cardiovascular disease, metabolic syndrome, diabetes and dental loss. Not only do they not contribute to construction of healthy cells, tissues and organs, they can can make you sick.

3. FULLY DIGEST YOUR FOOD BEFORE EATING AGAIN

Make sure your stomach is empty before giving it more food. Eating between meals or without sufficient time between one meal and another confuses your digestive processes. This confusion gives place to indigestion and to the accumulation of undigested food which causes inflammation, lethargy and obesity.

4. SLEEP BETWEEN 7 AND 9 HOURS DAILY

Also make sure you have a regular schedule. Children and adolescents should sleep more hours. Go to bed early and wake up early to be in sync with the rhythms of nature.

5. EAT YOUR MAIN AND MOST ABUNDANT MEAL AT MIDDAY

Between 12:00 and 3:00 pm, wen your metabolism - and your digestion - are strongest. By doing so you will absorb your meal´s nutrients more effectively.

6. MODERATE YOUR FOOD INTAKE

Leaving about 20% of your stomach empty will make you feel more energetic throughout the day.

7. COMBINE YOUR FOODS SO CAN OPTIMIZE THEIR NUTRIENTS

8. DRINK HOT, SPICY LIQUIDS

Spices aid digestion. Start your meals with a hot soup or a small cup of tea, both prepared with spices . Hot drinks have a vasodilator effect that increases circulation in your gastrointestinal system and helps dissolve the food in your stomach.

9. MOVE AFTER YOUR MEALS
Exercise, go for a walk, do household chores.

10. CALM YOUR MIND

Before eating and eat in good company. Take your time while eating your meals. Don’t eat while working, watching TV or using your phone.

11. EAT A LIGHT AND EASY-TO-DIGEST DINNER
Such as whole grains with steamed vegetables. A light dinner will help you sleep better and allow your body to regenerate during sleep. Dairy, meats, and raw salads are more difficult to digest, so it is better to eat them at midday when your metabolism is stronger.

12. EAT HEAVY FOODS IN MODERATION

Heavy foods are difficult to digest, so it is important you eat them in moderation. This does not mean you should eliminate them from your diet.
